Warming Winter Vegetable Stew

Nourish your body and warm up your insides with this delicious, creamy stew — perfect for the winter months. Not only is it protein-packed, but the variety of veggies adds plenty of vitamins for immunity. It’s also gluten and dairy-free.


½ cup chopped green beans
½ cup chopped cauliflower
¼ cup chopped carrot
¼ cup cubed tofu
2-3 cups creamy tomato base (try our Creamy Tomato Sauce recipe)

Cook vegetables in sauce until tender and soft.
Serve with a side of healthy grains, such as brown rice, barley, or quinoa.
