Superfood Oatmeal Power Bowl

By Katie Papo (Ambika)

Every morning after my yoga practice, I indulge in a healthy oatmeal power bowl. This is one of my favorite fiber and protein-filled breakfasts, because not only will it keep me full until lunchtime, but it’s easily adaptable for every season and all my favorite flavors.

Here are the ingredients for my three favorite oatmeal power bowls:

Tropical Sunrise Superfood (perfect for warm weather)

1 cup rolled oats
1.5 bananas
½ papaya
1 tbsp chia seeds

Comforting Fall Fusion (to keep you warm in the winter months)

1 cup rolled oats
½ cup applesauce
1 apple cubed
1 tsp cinnamon
1 tbsp chia seeds

Chocolate Lover’s Dream (need I say more?)

1 cup rolled oats
1.5 bananas
1-2 tbsp cacao powder
1 tbsp chia seeds
1 tbsp pumpkin seeds (optional)

Recipe:

  1. Measure 1 cup of rolled oats in measuring cup and then pour water over the oats until they are almost covered with water.
  2. Add 1 tbsp of chia seeds
  3. Add fruit and push down into the measuring cup so it’s covered by the water.
  4. Let sit in refrigerator for 20 minutes or freezer for 10 minutes
  5. Drain excess water and empty measuring cup into bowl. Add spices, then stir and mash ingredients around within the bowl until flavors are evenly distributed within the oats.

Can you please explain why this needs to go in the fridge instead of enjoying it right away?
