Simple Sweet Potato Mash

The holiday season often encourages us to indulge our sweet tooth. Here’s a delicious recipe to experience some sweetness without sacrificing your health.

Sweet potatoes are high in many important nutrients. They contain a good amount of fiber as well as vitamin A, vitamin C, manganese as well as riboflavin, phosphorus, vitamin E, vitamin K, calcium and iron.

Ingredients:

3 large sweet potatoes (peeled and chopped)
2 tbsp coconut oil
¼ cup coconut milk (optional - almond milk or water can also be used)
¼ cup applesauce or 1 tbsp maple syrup (optional for added sweetness)
⅓ tsp salt
2 cups chopped cauliflower
½ tsp cinnamon

Recipe:

  1. Bake sweet potatoes until soft
  2. Boil cauliflower until fork tender.
  3. Add cooked sweet potatoes and cauliflower to food processor, along with coconut oil, coconut milk, and optional sweetener. Blend until smooth. Add water if needed for desired consistency.
  4. Add salt and cinnamon to taste.
