Simple Sweet Potato Mash
The holiday season often encourages us to indulge our sweet tooth. Here’s a delicious recipe to experience some sweetness without sacrificing your health.
Sweet potatoes are high in many important nutrients. They contain a good amount of fiber as well as vitamin A, vitamin C, manganese as well as riboflavin, phosphorus, vitamin E, vitamin K, calcium and iron.
3 large sweet potatoes (peeled and chopped)
2 tbsp coconut oil
¼ cup coconut milk (optional - almond milk or water can also be used)
¼ cup applesauce or 1 tbsp maple syrup (optional for added sweetness)
⅓ tsp salt
2 cups chopped cauliflower
½ tsp cinnamon
- Bake sweet potatoes until soft
- Boil cauliflower until fork tender.
- Add cooked sweet potatoes and cauliflower to food processor, along with coconut oil, coconut milk, and optional sweetener. Blend until smooth. Add water if needed for desired consistency.
- Add salt and cinnamon to taste.
