Healthy Breakfast — Oatmeal Banana Pancakes

We’ve always been told that breakfast is the most important meal of the day — and it is! It literally ‘breaks the fast’ and resets your metabolism, allowing you to launch your day as your best self. So, it’s important to use quality fuel that serves your body best.

This healthy breakfast recipe will get your day started in a delicious way.

Oatmeal Banana Pancakes or Waffles

Ingredients (for 8 people)

8 cups rolled oats

8 cups water

4 bananas

1 cup chopped walnuts

8 tablespoons maple syrup

1 teaspoon sea salt

2 tablespoons vanilla extract

4 tablespoons grapeseed oil

Orange slices for garnish

Applesauce for topping

Directions

  1. Place all ingredients, except grapeseed oil, in a blender and blend until smooth. Let stand a few minutes until batter thickens. If batter is too thick to pour easily, add some water.
  2. Heat oil in frying pan or skillet. Pour batter, by 1/4 - 1/2 cup, into pan and cook for 2 – 3 minutes on each side. (For waffles: Pour into a heated waffle iron and cook for 10 minutes.)
  3. Serve with slice of orange and applesauce on top.
