Avocado Chocolate Pudding

Chocolate Avocado Pudding Bowls

If there’s a healthier way to eat chocolate, we want to know about it! This easy recipe offers a more nutritious and delicious way to satisfy the the sweet tooth. You’ll get the healthy fats of avocado, magnesium from cacao powder, and the antioxidants of any fruit you choose to add to your pudding bowl.

Ingredients (makes 1-2 servings):

1 medium to large avocado
1/4 cup unsweetened cacao or cocoa powder
1/4 cup (60 mL) maple syrup or brown sugar
2 tablespoons unsweetened almond milk or other nut milk
1 tablespoon natural smooth almond butter (optional)
1/2 teaspoon vanilla extract
Salt to taste

Directions:

  1. Add the avocado, cocoa powder, maple syrup, almond milk, almond butter, vanilla, and into a food processor. Process until smooth.
  2. Taste and adjust salt and sweetener, if desired.
  3. Spoon into an airtight container, cover, and chill for 1 to 2 hours, or simply enjoy immediately at room temperature.
  4. Portion into bowls and top with all your favorite fruits like bananas or fresh berries, and nuts or seeds if desired.

Leftovers can be stored in an airtight container in the fridge for 1 to 2 days. The flavor tends to be best on the same day.
