Chia Power Protein Bars

Unique to the Sivananda Ashram Yoga Retreat Bahamas, these healthy energy-boosting bars are a great snack. Thanks to Karma Yoga Donna for sharing the recipe. Enjoy!

INGREDIENTS

3/4 cup chia seeds (high in protein, fiber, omega 3's)
1 1/4 cup dates (high in magnesium, fiber)
1 orange (vitamin c)
1/2 cup ground flaxseed (high in protein, fiber, omega 3's)
1/2 cup dried, unsweetened coconut (omega 3's)

DIRECTIONS

  1. Soak dates for about 10 minutes in warm water.
  2. Drain water and pulse dates in food processor until mostly smooth.
  3. Add orange to mixture and process again.
  4. Add chia, flax, and coconut to mixture. It should be moderately firm.

Then, place in pan and bake at 350° for around 10-15 minutes.

Or, for a raw treat, put in dehydrator instead of traditional oven at 100 degrees for around 8 hours, depending on desired consistency. This is how we make them at the ashram Boutique.

OPTIONAL

For an extra special treat, you can add 1/4 cup chopped hazelnuts, 4 tbsp. cacao powder, and 4 tbsp. water.
