Vegan Pecan Sandies
There’s something magical about the holidays that calls for cozy, homemade treats. These Vegan Pecan Sandies are the perfect addition to your dessert spread or as a thoughtful gift for loved ones. With their melt-in-your-mouth texture, rich nuttiness, and a touch of powdered sugar, they embody the warmth and joy of the season.
Ingredients
- 1 cup vegan butter, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 2 cups all-purpose flour (or gluten-free flour blend)
- ½ tsp salt
- 1 cup finely chopped pecans
- 2 tbsp almond milk (if needed for binding)
Optional Topping:
- Extra powdered sugar for dusting
Instructions
1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a large bowl, use a hand or stand mixer to cream the vegan butter and powdered sugar until smooth and fluffy.
3. Mix in the vanilla extract.
4. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet mixture and mix until a crumbly dough forms.
5. Fold in the chopped pecans. If the dough is too crumbly, add almond milk, one tablespoon at a time, until it holds together.
6. Scoop tablespoons of dough, roll into balls, and slightly flatten onto the baking sheet.
7. Bake for 12–15 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
8. Once cooled, dust the cookies with extra powdered sugar for a festive touch (optional).
Storage Tips:
- Store the cookies in an airtight container at room temperature for up to a week.
- These cookies also freeze well for up to 2 months—just thaw before serving!
