Dark Chocolate Almond Butter Cups

There’s something irresistible about the combination of rich, nutty flavors and dark chocolate indulgence. These Dark Chocolate Almond Butter Cups are a delightful treat, perfect for satisfying sweet cravings or sharing as a thoughtful, homemade gift. With their creamy almond butter filling and smooth chocolate shell, they’re a simple yet elegant addition to any occasion.

Ingredients:

  • 1/2 cup dark chocolate chips (dairy-free for vegan)
  • 1/3 cup almond butter (can also substitute peanut butter)
  • 2 tbsp almond flour
  • 1 tsp maple syrup
  • Optional: Sea salt for sprinkling

  1. Prepare the Base: Line a mini muffin tin with parchment liners.
  2. Melt the Chocolate:
    • Double Boiler Method: Fill a small pot with 1-2 inches of water and bring it to a simmer. Place a heatproof bowl over the pot, ensuring it doesn’t touch the water. Add the dark chocolate chips and stir until fully melted and smooth.
    • Microwave Method: Place the dark chocolate chips in a microwave-safe bowl. Microwave on medium power in 30-second intervals, stirring after each, until melted and smooth.
  3. Assemble the Cups: Spoon a thin layer of melted chocolate into each parchment liner. Gently tap the tin to level the chocolate. Chill in the fridge for 10-15 minutes or until set.
  4. Make the Filling: In a small bowl, mix almond butter, almond flour, and maple syrup until a thick, smooth paste forms.
  5. Layer the Filling: Place a small dollop of the almond butter mixture on top of the hardened chocolate. Flatten slightly with a spoon or your fingers.
  6. Top with Chocolate: Pour another layer of melted chocolate over the almond butter filling, ensuring it is fully covered. Tap the tin again to smooth out the tops.
  7. Chill and Serve: Refrigerate for at least 20 minutes, or until fully set. Remove from liners and enjoy!

Optional: Sprinkle a small pinch of sea salt on top before chilling for added flavor.
