Stuffed Sweet Potatoes with Avocado & Black Beans
Packed with fiber, plant-based protein, and essential vitamins like A, C, and K, this dish is as nourishing as it is delicious. The combination of sweet potatoes, black beans, and avocado provides a perfect balance of complex carbs, healthy fats, and protein—keeping you satisfied and energized.
Ingredients:
- 2 large sweet potatoes
- 1 can black beans, rinsed and drained
- 1 avocado, diced
- ½ red onion, finely chopped
- 1 tbsp olive oil
- ½ tsp cumin
- ½ tsp smoked paprika
- Juice of 1 lime
- Fresh cilantro, chopped
- Salt and pepper to taste
Instructions:
- Preheat oven to 400°F (200°C).
- Prick sweet potatoes with a fork and bake for 40-50 minutes until tender.
- In a pan, heat olive oil and sauté red onion.
- Add black beans, cumin, smoked paprika, salt, and pepper.
- Cook for 5 minutes.
- Slice sweet potatoes open and mash slightly.
- Fill with the black bean mixture.
- Top with diced avocado, lime juice, and fresh cilantro.
