Stuffed Sweet Potatoes with Avocado & Black Beans

Packed with fiber, plant-based protein, and essential vitamins like A, C, and K, this dish is as nourishing as it is delicious. The combination of sweet potatoes, black beans, and avocado provides a perfect balance of complex carbs, healthy fats, and protein—keeping you satisfied and energized.

Ingredients:

  • 2 large sweet potatoes
  • 1 can black beans, rinsed and drained
  • 1 avocado, diced
  • ½ red onion, finely chopped
  • 1 tbsp olive oil
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • Juice of 1 lime
  • Fresh cilantro, chopped
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Prick sweet potatoes with a fork and bake for 40-50 minutes until tender.
  3. In a pan, heat olive oil and sauté red onion.
  4. Add black beans, cumin, smoked paprika, salt, and pepper.
  5. Cook for 5 minutes.
  6. Slice sweet potatoes open and mash slightly.
  7. Fill with the black bean mixture.
  8. Top with diced avocado, lime juice, and fresh cilantro.
