Shredded Sweet Potato Salad: A Delish Vegan Side Dish

This recipe is an easy, delicious, and nutritious side dish to bring to a Thanksgiving potluck or to serve at your family table. No-bake!
Shredded Sweet Potato Salad
2-3 sweet potatoes or yams
1 cup unsweetened, shredded coconut (big or small flakes)
1/4 cup fresh chopped ginger
4 juiced lemons
2 oranges chopped into bite sized chunks
1 cup pistachios
Grate sweet potatoes, apples, and ginger. Pour fresh lemon juice over mixture. Mix in orange chunks. Top with coconut and walnuts. Delicious and unique!
