Golden Coconut Stew with Kale, Sweet Potatoes & Lentils

This nourishing stew is a beautiful example of sattvic eating—calming to the mind, supportive to digestion, and deeply grounding to the nervous system. From an Ayurvedic perspective, the combination of sweet potatoes and lentils provides both stability and strength (balya), while the warming spices like ginger, cumin, and turmeric kindle agni (digestive fire) without creating excess heat. Coconut milk soothes Pitta and nourishes Ojas—the body’s vital essence—while kale offers gentle detoxification. This dish balances Vata and Pitta doshas and is especially beneficial during times of stress, offering a sense of warmth, comfort, and inner steadiness.
 
Ingredients:
• 1 tbsp coconut oil
• 1 medium yellow onion, diced
• ½–1 tsp dried chili flakes
• ½ tsp ground coriander
• ½ tsp ground cumin
• ½ tsp ground turmeric
• 2-inch piece fresh ginger, minced
• 3 cloves garlic, minced
• Sea salt and black pepper, to taste
• 1½ lbs sweet potatoes, peeled and diced
• ½ cup brown lentils, rinsed
• 4 cups vegetable broth
• 13.5 oz can full-fat coconut milk
• 1 small bunch kale, chopped
• Garnish: Chopped cilantro, extra chili flakes, lime wedges, nigella seeds
 
Instructions:
1. In a large pot over medium heat, melt coconut oil. Add diced onion and sauté until translucent, about 5 minutes.
2. Stir in chili flakes, coriander, cumin, and turmeric; cook until fragrant, about 1 minute.
3. Add minced ginger and garlic; cook for another minute. Season with salt and pepper.
4. Add diced sweet potatoes and lentils; stir to combine. Pour in vegetable broth, scraping up any browned bits.
5. Bring to a boil, then reduce heat to a simmer. Cover partially and cook until sweet potatoes are tender and lentils are cooked, about 30 minutes.
6. Stir in coconut milk and chopped kale. Simmer until kale is wilted, about 3–4 minutes. Adjust seasoning as needed.
7. Serve hot, garnished with chopped cilantro, extra chili flakes, lime wedges, and nigella seeds.
